Overnight Apple Cinnamon French Toast Bake
Put it together the night before and bake it in the morning. A warm, filling brunch for a mahjong morning.

The mahjong ladies are coming for brunch, so let’s make an overnight apple cinnamon French toast bake. You put it together the night before and bake it in the morning.
You’ll need
Serves 8 to 10. About 20 minutes, an overnight chill, and 45 minutes to bake.
- 1 loaf (about 16 oz) French bread or brioche, cubed
- 2 apples, peeled and chopped
- 2 tbsp butter
- 8 eggs
- 2 cups milk
- ½ cup brown sugar
- 2 tsp cinnamon
- 1 tsp vanilla
- Maple syrup, to serve
Make it

Soften the apples in the butter for about 5 minutes.

Whisk the eggs, milk, sugar, cinnamon and vanilla.

Put the bread and apples in a greased 9x13 baking dish, pour the custard over, cover and chill overnight.

Bake covered at 350°F for 30 minutes, then uncovered for about 15 minutes more, until puffed and set. Serve with maple syrup.
Lady M’s tips
- Slightly stale bread soaks up the custard best.
- Take the dish out of the fridge while the oven heats.
- Honeycrisp or Granny Smith apples hold their shape.
On my table
Bring it straight to the sideboard in the baking dish, with warm syrup in a little pitcher.
That’s it, and you’re ready for game night. Bird Bam Cheers! ...and happy mahj-ing!
