Apple Cider Mimosas

Cold cider, chilled bubbly and a cinnamon-sugar rim. The easiest fall drink for a mahjong afternoon.

Three apple cider mimosas in flutes with cinnamon-sugar rims and apple slices, on a pink tablecloth with fall leaves and a rack of mahjong tiles

Okay, ladies, here’s a fall drink you can make in about five minutes: apple cider mimosas with a cinnamon-sugar rim. Half cider, half bubbly, and an apple slice on top.

You’ll need

Makes 8. About 5 minutes.

  • 1 bottle (750 ml) prosecco or other dry sparkling wine, chilled
  • 3 cups apple cider, chilled
  • 2 tablespoons sugar mixed with ½ teaspoon cinnamon
  • Honey or caramel sauce, for the rim
  • Thin apple slices, to garnish

Make it

Dip the rim of each glass in honey, then in cinnamon sugar.

  2. Illustration: apple cider pouring into a cinnamon-sugar-rimmed champagne flute, half full

Fill each glass halfway with cider.

  3. Illustration: a cinnamon-sugar-rimmed champagne flute filled with a bubbly golden apple cider mimosa

Top with prosecco, pouring slowly so it doesn’t foam over.

  4. Illustration: apple cider mimosas in sugar-rimmed flutes with apple slices on the rims, on a wooden tray beside red apples, fall leaves and a few mahjong tiles

Tuck an apple slice on the rim and serve.

Lady M’s tips

  • Both bottles should be very cold.
  • For a mocktail, top with sparkling cider instead.
  • Rim the glasses an hour ahead and keep them upright.

On my table

Set up a little mimosa bar beside the mat: glasses rimmed, cider in a carafe and the bubbly on ice.

That’s it, and you’re ready for game night. Bird Bam Cheers! ...and happy mahj-ing!
